Sage fritters

Sage fritters

Ingredients
 
 

  • 300 g of all-purpose flour
  • 0.5 tsp sugar
  • 1 tsp of salt - + a little to serve
  • 1 knife tip nutmeg
  • 25 cl of very cold lager
  • 1.5 l vegetable oil for frying
  • 20-30 sage leaves

Instructions

  • In a bowl, mix flour, sugar, salt and nutmeg
  • Whisk in beer until mixture is thick enough to coat the back of a spoon
  • Pour the oil into a cast iron casserole if it goes on the stove, otherwise into a large saucepan and heat to 190°.
  • Throw a small piece of dough into the oil: if it sizzles and browns, the oil is hot enough.
  • Dip the sage leaves one by one in the batter, then place them in the hot oil and let them fry, turning them often to obtain an even cooking (Cooking time 2 min per fritter).
  • Arrange doughnuts on a large plate lined with paper towels to remove excess oil, then transfer to serving dish.
