Potato salad with radishes

Ingredients
  

  • 800 g of firm potatoes when cooked
  • 2 bunches of radishes
  • 1 bunch of chives
  • 1 or 2 hard-boiled eggs

For the sauce:

  • 3-4 tbsp of Greek yogurt
  • ½ tbsp of mustard
  • 2 tsp of mayonnaise
  • Salt and pepper

Preparation

  • Cook and cool potatoes. Peel and cut into quarters, then into small slices.
  • Thinly slice the radishes and chop the chives.
  • Chop the hard-boiled eggs.
  • Mix all ingredients in a bowl.
  • Prepare the sauce by whisking the yogurt, mustard and mayonnaise until the sauce is smooth. Add salt and pepper to taste.
